Slato has occupied a former wine cellar in the historic centre of Montpellier since 1998. The vaulted stone room has not changed; the menu changes every six weeks.

We work with eleven producers from Hérault and Gard, all within sixty kilometres. The fish comes from Sète, landed the same morning.
